
Ingredients:
1 homemade or store bought pie crust
2 tbsp butter
1 cup leeks, chopped
3 oz baby spinach
2 garlic cloves, minced
4 eggs
2 tsp curry powder
1 tsp garam masala
1/4 tsp nutmeg
1/2 cup coconut milk
1/2 cup slivered almonds, chopped
1/2 cup crumbled feta cheese
Salt and pepper to taste
Instructions:
1. If using a frozen pie crust set on counter to start defrost.
2. Melt butter in a pan over medium low heat. Add leeks and sauté until soft. Add spinach and sauté just until wilted. Add garlic, sauté 30 seconds more. Remove from heat and set aside.
3. In a medium bowl whisk together the eggs, seasonings, and coconut milk. Stir in the almonds and the feta cheese, then the spinach mixture. Season with salt and pepper.
4. Pour filling into the pie crust. Bake at 350 degrees for 35-40 minutes. Enjoy! .
