Ingredients:
FOR THE BATTER
1 cup flour
1 tsp salt
1 tsp baking powder
3 tbsp sugar
1/2 tsp cinnamon
2 eggs
1 tbsp pure vanilla extract
1 tbsp melted butter
1 1/4 cups diced peeled peaches (approx. 2 large, or 3 small peaches)
canola oil for frying, 2-3 cups
CREAM GLAZE
1 cup icing sugar
1 tsp pure vanilla extract
1 tsp milk
Instructions;
In a large bowl sift together the flour, salt, baking powder, sugar, and cinnamon. Whisk in the eggs, vanilla, and melted butter. Then fold in the diced peaches.
In a deep pan add about 1/2 inch oil. Heat on medium low to about 375 degrees F. Use a tablespoon to heap a batch of the batter and add to the pan. Fry for about 2 minutes, then flip with a spatula and fry another 2 minutes, until golden brown. Remove and transfer to a plate with paper towel. Continue until you've used all the batter.
Lay a piece of parchment paper to cover a cooling rack then place the fritters on top. Let them sit to cool about 15 minutes. In a bowl whisk together the glaze ingredients. If you want the glaze to be thicker just add a few more tbsp of icing sugar. Then drizzle over the fritters. Enjoy!
